Favorite Pancakes

These are gluten free and very high in protein.  The boys love them, Zach ask me every morning to make them.

2 C oatmeal
2 C cottage cheese
2 C egg whites
2 t baking powder
1 t salt
1 t vanilla
1 t cinnamon

 Mix all ingredients in the blender and pour onto hit griddle.  Depending on our mood we will add things like pumpkin, strawberries, blueberries, bananas, coconut, or chocolate chips.

  1. We've had these three time now. I give recipes 3 tries if I like it myself. It gives the boys a chance to aclimate if it's something strange and new. They did notice something "strange" about these pancakes the first time we had them, but they ate them all, so strange didn't stop them:-)They like these with mini chocolate chips...who wouldn't right. It helps to blend up the oatmeal first so it's extra fine before adding the other ingredients. I enjoy having a gluten free, protein packed choice like this for starting their day off right.
